OT: You ain't chillin if you ain't grillin!!

This has absolutely NOTHING to do with Braves stats, the team's management, or the team in general (hence the 'OT' proclamation).  So tune this fan post out if thats what you are looking for.

Instead this post is just a Spring-Training-Get-Me-Through-Till-April filler post.  I don't think I'm alone when I say I love to grill during the summer months and nothing complements a 7:10pm first pitch more than a cold brew and a grill.  In my life, they go hand in hand.  My two passions are my Braves and cooking/grilling.  I just got my first Big Green Egg for Christmas and I've become obsessed.  This isn't a BGE forum but I've included a pic of my BGE and the table I made for it.  This is set up right outside my Braves man-cave on the patio.  I'll spend 6 hours a night watching Braves baseball, shootin' some pool, and puttin' down a couple pops here during the summer months... this is my heaven.

Star-divide

This leads me to my two questions.  During your late evening Braves game nights at home:

1.  What's your cocktail or beer of choice when you're going to put down a couple on a weeknight while Chip Carey screams into his mic?

-and-

2.  What's your specialty on the grill and what kind of marinades/rubs/prep do you use?  Maybe something you prepare for the day-long tailgates in the Blue lot.  I don't know... let's get creative with this and learn a little bit about the Talking Chop regulars!

My new BGE and table:

Loving the Labatt

+1 for the Yuengling for the following reasons:
1. It’s cheap. I don’t know why the manu doesn’t raise the price because its worthy of more than the $9.99/12er (on sale). I’d pay Sam Adams’ prices for Yuengling.
2. It’s everywhere. We just got it in GA two years ago and now it is in all the grocery stores and gas stations.
3. I went to pharmacy school in Pittsburgh and Yuengling is made in Pottsville, PA, so I like to think I am drinking my local college beer…. even though Pitt and Pottsville are three hours apart. LOL.

To be honest

I liked Yuengling more when it wasn’t available in GA. It was what I would always drink when I visited my family and friends back in Virginia and Maryland, and now that it’s available down here, I’m kinda over it now. It’s not bad once you’re already buzzed, but there’s a list of beers I’d rather drink before Yuengling now.

I'll bite

1. Grolsch – damn fine beer.
2. Smoked Steele-head trout.

My daughter caught a monster Steele-head last year, it was an epic moment for me, and we smoked one side of it for about 6 hours. Picked some fresh rosemary from the garden tossed it into a blender with a couple garlic cloves and olive oil. Smother the fish with it and place in smoker. Best fish I have ever tasted, can’t wait to catch another this spring!

If you like Coffee pork I have a mad recipe for a boston butt though it is a “crock-pot” dish (non-griller). It’s sort of a “proprietary” recipe so I don’t want to post it online, but if you email me ….

Not very original

1. I tend to favor cervesas, so I like brews like Presidente, Dos Equis, Sol, and Corona. But I’m not very discriminative, and my beer fridge tends to have a variety of brews, ranging from cervesa, seasonal Sam Adams, Sweetwater Blue, Dogfish Head Indian Brown, Amstel Light, and admittedly, Bud Light with lime.

2. I’m a charcoal, sometimes wood griller, and I have an also-unoriginal Weber grill on my back patio that is a season away from retirement. I’m not averse to experimenting with different meats/veggies on the grill, but when I’ve had a long day at work and the Braves are on the road, I’ll typically stick to the basics; burgers, brats, hot dogs. Food for watching baseball for me, I’d rather not have to use utensils. Hell, even plates are useless unless it’s holding more food, out of reach for pets.

The best feelings are going in and out of the house eating the first dog/brat while the other food finishes and watching the first innings of a game.

No wonder nobody likes you, Tuttle... everything's a (Pujols) damn debate.

I may not win...

But I’ll promise a top three finish in the most beers tried category.

Barring any brew connoisseurs such as myself, I’ll take the prize without much of a fight.

I’m 30 now, and have been trying at least 2 new beers per week since I graduated college at 22. Even in college, I was trying at least one new brew per week, as I had a radio show with a beer of the week. So that alone puts me at approximately nearly 1,000. That doesn’t include beer festivals attended…gone to Great American Beer Fest three times now, probably try 100 new beers each time I do that.

Add in CO breweries, tap houses, etc., and I figure I can offer a conservative estimate of 1,500 beers.

I love IPAs, Belgians, stouts, abbeys, browns, and wheats. I have it pretty easy living in Colorado, as the microbrew explosion out here has been tremendous. I can go to any of about 20 bars, breweries, and tap houses at any given time and expect to find more new beers than I can try in an evening. My favorite is Falling Rock Tap House, which rotates out kegs of more than 75 different beers at any given time, none of them being major domestics. My favorite brewery is Great Divide, which doesn’t put out a ton of different beers but has had probably 30 or so since I moved to CO. It’s the 7th ranked brewery in the world, according to BeerAdvocate or Ratebeer (can’t remember which), both of which are reputable beer journals.

My favorite beer is Great Divide’s Anniversary Wood Aged Double IPA, of which the 17th Anniversary batch becomes available on April 8 at their upcoming release party. The 15th installment was my very favorite, but last year’s 16th was also incredibly well done, would still fall in my top five. It’s got a mellow, citrus-y, oaky, vanilla-y taste that balances well with the hops you’d expect from a double IPA (most double IPAs are overwhelmingly hoppy and you don’t experience any balance). It has a 10-10.5% ABV, but you can’t taste the alcohol nearly as much as you’d expect. Really-well crafted.

I could go on and on about beer all day long, but I’ll stop here before it gets ugly.

Corona's not bad

My only objection is when some places have the audacity to call it “an import,” and try to charge thusly for it.

As for Presidente, I’ll admit now that I grew curious about it because it was the common beer constantly displayed in Dexter, that when I went to Florida for a trip, I drank nothing but Presidente. The lowdown is that it’s a Dominican brew, and only available in the state of Florida outside of the D.R. I’ve only found it twice in the Metro Atlanta area, and it’s been a while; I stop at almost every supermercado and check when I find one new.

Had Presidente in the Dominican Republic, was there a week and drank it everyday not because it was good (it wasn’t), but because it was the only beer available. This is an outstanding thread.

For beer I really enjoy Landshark, but when Chip really gets excited (FISTED!), I’ll reach for plain old Jack and Coke.

For the grill…well, it may not be as manly, but I usually do my steaks on the stove-top – heat up some olive oil in a pan, season the steak with some garlic salt, and sear it 3 1/2 minutes on each side. Best. Steak. Ever.

But for the grill, any kind of Dale’s seasoning is really good, and rub it in some garlic and onion powder. The BGE definitely does it best.

For mixers, I tend to go with a basic Cuba Libre/Rum & Coke.

2. I don’t grill very often. When I do, I like to go for a very basic steak with just olive oil, salt, pepper, and garlic powder, or a Pork Tenderloin marinaded in Lime, honey, and chipolte.

For Burgers, the best tip is to buy the cut whole get the guy at the store to grind the meat fresh for you the day you cook it.

Many have suggested Yuengling which is a good starting point and will fit in the college kid budget.
I also suggest using an island style lager as a good starting point for beer drinking as it is refreshing, light, and with simple taste notes (though it isn’t really a “man beer” if that is your goal.)

Samuel Smith makes a really good, pure-brewed lager which is a great starter if a bit expensive.

If you want to go high grav I suggest Tommy Knocker’s Imperial Nut Brown Ale is flavorful and packs a punch.

Otherwise, off the top of my head the Sam Adams Octoberfest is a great starter beer.

The question is what kind of beer did you try

If we have an idea of what beer you tried, it could lead to some idea to what to suggest.

Me, I don’t like beers that are too hopsy (bitter) – so pretty much anything brewed by Rogue is out of the question for me, no matter how awesome the names of their brews are. When I first started drinking “legally”, it was while I was visiting Toronto, where the drinking age is/was 19. So my first favorites were stuff like Alexander Keith, Molson, and Strongbow (cider).

I should be a little adventurous

I’ve seen people mix random things with Strongbow that I assume tastes horrid (Guinness, Chocolate stout). I thought the people ordering them were mostly doing it for the science-y way the liquids layered for bar talk, but the people drinking them seem to love them.

Yeah.

Seen all those different Strongbow mixes, mostly at The Vortex.

Never tried any of them apart from the Harp/Strongbow mix. Works well in that it takes a lot of the “bite” out of the Strongbow but doesn’t complicate the flavor too much—which I think the Guinness/Strongbow mix or the like would.

Don't get me wrong...

Cider is very good; however, Strongbow is not.

Personally, I do not like any cider that adds sugar in order to increase the alcohol content. Cider that is created by allowing the natural fermentation of the fruit to create the alcohol content is great. If you live in California, Oregon, or Washington, look for Two Rivers Cider. Now that is some good stuff.

Hornsby's is great

When I was 17 my cousin brought over two 12packs to split amongst three of us. My light drinking friend only had two and was stupid drunk. The other 10 were split equally between me and my cousin. I’ve always had high drinking tolerance but got pretty drunk from only five beers. It’s a strong brew!

My suggestion...

Try all styles (Lager, Mexi-style lager, wheat, brown ale, IPA, stout), and find one that is palatable. Once you can find a brew you can suck down without hating yourself, keep on it. Then look for other beers with that same style. Branch out to beers with similar tastes, and eventually you’ll get used to the overall flavor of beer.

From there, repeat. Try everything again once beer tastes good to you, and you’ll probably find another style you enjoy. Find more brews with that style and give them a whirl.

Wash, rinse, repeat.

If all else fails in the initial step, try something fruity. Pyramid Apricot Ale, Lindemann’s make a bunch of fruity ales with wild yeast, etc. They’re all pretty good, but it’s not going to improve your masculinity. However, it’s all a process…drinking those will still get you more used to the taste of beer, enabling you to branch out and try other stuff.

ive spent some time on beer advocate, and its a cool resource

But for a beginner idk. I’ve had some terrible beers that were A’s on BA. The hoppier and the more alcohol content, the higher the grade, with very few exceptions. i think someone starting out would enjoy something the more pretentious of the reviewers over there would dismiss as having no taste.

Yea but the rating system helps you learn the jargon and how to grade and view beers. Also since the readers comment you can find a wide variety of palates at start seeing what you look for a bit better.

Also it provides similar beers (maybe its just style) and ratings for the style which helps if you’ve developed a taste for a certain brew style.

by GumpBrave on Mar 6, 2011 10:45 PM EST up reply actions

Valid point...

It’s hard to tell what’s a basic brew versus an advanced brew on those types of sites.

However, it’s a good resource for looking at different styles of beer, finding similar styles, etc. Once you’re a novice, I’d recommend it.

One gateway beer...to more beer.

And I hate to even utter its name – Blue Moon.

It’s a Belgian White, which is the first major beer you’re likely to try with actual ingredients outside of malt, hops, yeast and water. I actually really dig white ales, but Blue Moon is really generic (for my taste buds). It’s getting to be that time of year…give Sam Adams’s White Ale a look, should be out soon, if it isn’t already. It was my first favorite “springtime” beer, and it’s great for baseball season. It’s light but has some flavor zing to it, not too strong, and you can drop an orange in it, if you so desire. I don’t, but to each their own…the citrus will kill some of the alcohol taste and add a fruity, sugary touch to the brew.

Don’t feel too bad. I’m not much of a beer guy; I’ve experimented and found a few that I know I can tolerate, but I really have to be in the mood for one. I like whiskey and scotch, but my casual standby drink of choice is just a plain rum and coke with a healthy dose of lime.

That said, I’d recommend Sam Adams Cherry Wheat or Octoberfest (though you have till the fall for that one), or Modelo Especial. It’s the top shelf brand from the people that make Corona, and it goes down very easy.

I would suggest wheat beers, as they generally are the least harsh. I like you had to develop a taste for beers. I still don’t like anything that is to hoppy or bitter or anything that is a pale ale (much like the good sir Royhobbs).

i really enjoy anything that is a wheat beer, also they often throw in other flavors that kind of mask the flavor. but as many other people have stated, if you want to like beer start trying them and just keep going until you find some you like… there are so many different beers, you are bound to find one you like…and for the most part its personal preference. I like wheat beers with a little bit of fruit in them (Cherry Wheat, Blackberry Witbeir by Sam Adams), and I don’t care if it is a bit sissy (to be fair Berry Weiss by Leinenkugel is awful).

Start with Blue Moon or something similar then move up to Yuengling, my personal favorite as well as popular choice in this thread. Try different types until you find what you like most. Also, as I didn't care much for the taste of beer until recently...

liquor drinks work well for this problem. You have to be careful not to get too drink too quickly, but liquor with mixers is usually sweeter and tastier. Rum and coke, whiskey and coke, whiskey and ginger ale, vodka and oj, etc. Mixing with coke or fruit juice can make it easier to take the taste.

I drink Yuengling as my default (aka Bud/Coors Light). I usually have a 12 in the fridge – it also helps that it’s my wife’s favorite beer. I like to try new beer, so I’m always rotating what I’m drinking. Been to the Jax Bud brewery here, Bud’s American Ale and their summer Beach Bum Ale are decent, Mirror Pond Pale Ale is good, but I can’t get that since moving back to the southeast (Oregon Brewery, their Twilight Ale is a good seasonal brew as well). Guinness is yummy, but does a number on my stomach anymore. I’m not a fan of Sam Adams Boston Lager, but their seasonal stuff is good. Just tried Duke’s Cold Nose Brown Ale yesterday (Bold City Brewery) and that was really good.

A corncob on the grill recipe

1. Soak corn, husks and all, in lightly salted water over night
2. Peel back husks carefully and apply generous amounts of melted butter as well as thick peppercorn pepper
3. Carefully re-wrap buttered and peppered corn in husk. The key is the moisture, so the husks being damp still means you’re in good shape. Might need to cord-shut the tips of the husks.
4. Throw entire corn cobs, still wrapped in husks on grill. This is not a recipe for those who like rare corn.

You know you’ve done it right if when you peel off the dried out husks, the corn is lightly charred, and the peppercorns stuck to the cob are swollen and still sticking to the cob.

You can make a surprisingly good and easy pulled pork “BBQ” in a crock pot.

It’s really good for when you’re having a bunch of people over to watch a game, but don’t want to deal with the work/price of grilling.

This is a pretty good recipe to use as a starting point if you like Carolina style (aka really vinegary) BBQ, I’d double the amount of brown sugar she uses though.

I’ve had crock pot BBQ before, not ashamed to say it was pretty damn good. Only thing missing was the smoke, the meat was real tender and moist.

and you can buy a bottle of Liquid Smoke to add that flavor. Its not as good as the real thing, and you don’t wanna overdo it, but it can do the job

Country grilling

One of the benefits of living in the second house on the family farm is that I have all the extra freezers used when we butcher a cow. That means lots of steaks and roast at my disposal at any time. The other great part of that – I don’t have to put up with store beef. I’ve been to many stores before I moved back, and I’ve never had beef even in the same continent as home-grown balanced-fed beef. I would raid the freezer for a couple steaks and a cooler full of ground beef whenever I was home when I lived out of state. The absolute best part of that. I can grill up a plain steak and not use any sauce, and it tastes AMAZING!

I’ve always been a “rich” taste guy, according to my friends (who were getting drunk on Keystone and Bud/Miller/Coors Light at parties). I enjoy the Sam Adams seasonals and various varieties of Guinness. Typically, though, if I’m having a steak I want to savor, I go with a nice tumbler of well-aged Scotch to savor as well.

Beer & Brats

Mostly drink Yuengling or support a local micro-brew unless I’m slummin it and go for MIller Lite which is always on sale in at least one of the grocery stores. Also like Maker’s Mark for a good smoth bourbon, Jack Daniels, Crown Royal if I’m feeling classy or a nice scotch. Moonshine is also welcomed; Junior Johnson’s peach brandy may be the best thing to ever contain alcohol. It’s legendary, honestly!

Johnsonville Cheddarwursts is my go-to grillin food. I’m fairly young and not much for grilling yet so I don’t own one, but my last roomate had a cheap $20 grill that was very effective. We’d grill burgers, steaks, chicken, whatever, but Cheddarwursts were always my favorite.

Anyone have any ideas on how to sneak beers into Braves games?

Beers, no. Liquor, yes. I do it every game.

You’re allowed to take in non-alcoholic beverages. Simply empty a coke bottle or water bottle and refill with your liquor of choice and boom-goes-the-dynamite! I think the rules say the bottle has to be sealed, so after you refill the bottle, be sure to tighten the cap as tight as possible to make it look sealed. Worst case is they find out your scam and confiscate it… not Earth-shattering. I’m 7 for 7 with that method though.

Would be difficult, short story about sneakin a few in a race once..

I used to live in Mooresville NC while attending college. Me and a friend got some free tickets to the All star shootout at Lowes motorspeedway so we gathered some brews and went to the race that evening..however for some reason our dumbasses forgot you could only take in cans in a certain size cooler, not glass bottles..anyways we get there and got denied of course so we spent about 15 minutes pounding a few down cause we were loaded full him with one cooler and me with another and I mean hey no one wants to waste or throw away beer ya know? well..I had on some slip on boots, I stuffed one each down the inside of my rocky boots..pressed against my leg it made my knees bend outward slightly..almost bow legged..my jeans were rather loose as well as I had lost a lot of weight being a college kid..I put two down the front of my pants right above my crotch and tightened my belt up as tight as possible..I walked in bowlegged and looking like I had a huge boner..people were staring all the way to my seat..it was rather funny..but no one said a word lol..

What, you don’t like paying $8 for $0.50 worth of beer???

I usually just get slizzard on cheap domestic swill before the game and then buy one or two during the game to keep the buzz goin. Beats walking out of there $50 lighter in the wallet because you wanted to drink a 6 pack during the game.

by Fatvirus on Mar 7, 2011 12:18 PM EST up reply actions

here's a trick

Since turner field allows outside food, here’s what you do.

1. Be in group.
2. Go to moe’s, Willy’s, chipotle or any other burrito joint. Get a burrito.
3. Wrap 12 oz. Cans if your preferred brand in tin foil, disguise it as a wrapped burrito. This is why it helps to be in a group so one guy doesn’t look like he’s going to eat five burritos.
4. Party.

Don’t be obvious with your contraband beer, and dont push your luck with an entire case or anything. and obviously put the real burrito on the top if an anal security guard wants to poke at them to check.

(It’s a shame that they don’t allow aluminum cans).

Or just premix yourself some Booze of choice + Coke in coke bottles and reseal as best you can.

If you really want to try for beer, buy a bunch of cream Soda in plastic bottles, get rid of it, and pour beer into the bottles.

I don’t drink much, but if the Braves need to rally I’ll pour some Peach Moonshine into a short glass and after a while it doesn’t matter if they rallied or not. I’m not into the micro brews, too bitter for me. I’d rather just have a Natural Light, Busch or Budweiser. As for grilling, i like spare ribs, I’ll hit them with a rub of cheyanne, garlic, paprika and a little brown sugar then coat them in a mixture of dijon mustard and soy sauce. Nothing added after I put them on the grill. Good stuff. Brats or Polish Sausage with some good mustard is an easy treat if I don’t want to take too long.

wrap in tin foil, steam with cider

Use your discretion with heat, but obviously slower time + longer cooking = more tender. But I prefer to oven steam with cider until they’re 75-80% cooked and then flash finish them on the grill, covered in whatever spices, rubs or sauces I happen to have around. Usually paprika, brown sugar, cumun and various peppers.

Favorite beer has got to be a Labatt or Landshark.
Shock Top is good stuff too. I like the smooth stuff.

One of the best things to throw on the grill:
Drunk Chicken

Drink half a can of your choice of brew.
Put your favorite blend of spices on a whole chicken.
Shove can inside of chicken, let chicken sit vertically on can.
Cook on low heat for 2 hours.
Split remainder of twelver with compadres.
Feast.

At Turner Field, i use my little $15 Walmart grill with Nathan’s hot dogs. That way if anyone steals my grill, i’m only out $15.

Vodka or tequila and steak

I usually just have a screwdriver or tequila sunrise with a salt and pepper seasoned steak sometimes marinated in some simple worchestershire type marinade on the gas grill. Nothing fancy for me. If it’s beer it’s usually just Bud Light.

I cut it up into cubes and did kabobs – actually did a grill basket instead of skewers, but filled it a bit too much so it took longer than kabobs normally do. I think they were on for 30 minutes (stirred the basket every 5-8 minutes and the thermometer is broken on my grill, but I had it on medium.

And I drank a Stella Artois :)

My beer selection...

depends on the weather. My go to offseason low-gravity beers are Fat Tire, Session, and a new brew called Railbender (by Eerie Brewing Co). If I’m going high-gravity, it’s most definitely St. Bernadus Abt 12.

However, I have a guilty pleasure that I know most beer purists frown upon and that is Abita’s Strawberry Harvest Lager. Nothing says “beautiful day” quite like wiffleball and Strawberry Harvest.

and grilling....

I’m having a beach party today (my wife and i live in santa rosa beach) with some friends. we’re smoking ribs today. with smoking, the dry rub is key (paprika, a bit of chili powder, brown sugar, salt, onion powder, minced garlic). the dry rub makes the ribs sweet enough, so we’ll go with a less sweet sauce (probably mustard based).

also, bratwursts is a st. louis tradition that my wife brought to our kitchen. i can’t take credit for this recipe, but bobby flay’s brats are ridiculous (minus the pickled eggs….yuck). He says to use “dark beer”. He doesn’t mean porter or black ale, but just a nice, toasty lager (fat tire, railbender, blue point). If you want to go a bit darker, I’ve used amberbock or abita’s turbodog. Here’s the recipe. Use wisely, my friends. Guys will be in awe. Women will be impressed.
